Fall is here!
Fall is an invigorating season. It brings with it a break from the summer heat, football and a bounty of fresh root vegetables. My favorite side dish is mashed sweet potatoes. I have an easy and delicious recipe that’s kicked up with a little Jack Daniel’s for added flavor. Fall is also is a time to enjoy fresh apple cider. It’s delicious on its own but I love to use it as an ingredient for a fall cocktail. A great pairing is bourbon and apple cider. Try my bourbon cider either cold or warm. Cheers!
3 29-ounce cans sweet potatoes
1 cup brown sugar
1/3 cup Jack Daniel’s Tennessee Whiskey
1/2 cup unsalted butter
1/2 teaspoon vanilla extract
2 cups chopped pecans
Preheat oven to 350 degrees.
Heat the sweet potatoes in a large sauce pan, over medium heat. Drain off some of liquid and mash the potatoes. Add brown sugar, Jack Daniel’s, butter and vanilla. Pour into a 2-quart shallow baking dish. Sprinkle with pecans. Bake uncovered for 30 minutes, or until pecans are golden.
Serves 8 – 10
In a rocks glass with ice, add:
1½ ounces Woodford Reserve bourbon
4 ounces of apple cider
Dash of cinnamon
Stir and garnish with apple slice or cinnamon stick.
Tip: This drink works chilled with ice or in a mug with warm apple cider
